Cookies

Ingredients

• 2 lg eggs
• 3/4 c sugar
• 2 Tbls lemon 🍋 peel
• 1 1/4 tsp bkg pwdr
• 1/4 C oil
• 1 tsp vanilla
• 1 tsp lemon 🍋(or almond) extract
• 1/4 tsp salt
• 2 C flour

Instructions

• Mix all together
• Divide in two
• Form 2 logs approx 12” x 1 1/2”
• Bake at 350
  • 20 minutes
• Take out cool on pan
• Cut into 1/2” slices
• Cook another 10-15 min
  • (Should have a little browned crunchy look)
• Cool

Icing

Ingredients

• 1 C white chocolate chips
• 1 Tbls shortening

Instructions

• Melt in micro
• Check and stir after 30 seconds. Will burn easily
