Lemon Biscotti

Cookies
Ingredients
- 2 lg eggs
- 3/4 c sugar
- 2 Tbls lemon 🍋 peel
- 1 1/4 tsp bkg pwdr
- 1/4 C oil
- 1 tsp vanilla
- 1 tsp lemon 🍋(or almond) extract
- 1/4 tsp salt
- 2 C flour
Instructions
- Mix all together
- Divide in two
- Form 2 logs approx 12” x 1 1/2”
- Bake at 350
- 20 minutes
- Take out cool on pan
- Cut into 1/2” slices
- Cook another 10-15 min
- (Should have a little browned crunchy look)
- Cool
Icing
Ingredients
- 1 C white chocolate chips
- 1 Tbls shortening
Instructions
- Melt in micro
- Check and stir after 30 seconds. Will burn easily
